| Vinification: | Complete destalking; direct pressing. Clarified by natural letting the deposit settle. Slow, heat regulated fermentation. |
Characteristics
- Appearance : Light in colour with slight green hue, turning to gold with age.
- Bouquet : Both floral and fruity. Complex, tart nose.
- Taste : A wine which is both rounded, yet slightly tart. Warm, intense fruit flavours with an elegant, unctuous finish.
Tasters advice
- Accompanies well : Aperitifs, cooked or grilled fish, starters, barbequed snails, vegetables (asparagus), baked dishes, fromage frais, etc…
- Serve at : 10-12°C
- Ageing : Best drunk when young to enjoy its crispness and its floral flavours, or if preferred, after 1 or 2 years to enjoy more vanilla and dessert fruit aromas. Must be stored away from direct light in a cool cellar.
